Shred Cooked Chicken and mix with BBQ sauce. Heat.
Saute sliced onions, red bell peppers, and mushrooms. Add drained unseasoned diced tomatoes.
Slice cheese of choice.
Set oven to broil. Slice Italian Loaf in inch/inch & 1/2 slices OR open hoagie rolls. Spread on cookie sheet and broil for 2-4 minutes or until slightly browned.
Add chicken, vegetables, and cheese. Return to oven and broil, open, until cheese begins to melt.
Serve with fries, tator tots, or chips of choice, and mixed steamed vegetables.
